Hi cjfau,
These is the validated memory type for your system:
Support for DDR4 SDRAM Memory (Non-ECC only) 2133 MHz.
The memory is over-clocked to 2400 MHz or 2667 MHz
Minimum: 4GB, Maximum: 32 GB
4GB (2x2GB)
8GB (2x4GB)
16GB (2x8GB)
32GB (2x16GB)
Regarding the GTX 1080TI it is not officially supported but it should work, the problem is that the reference model will not fit in the case.
These are the validated dimensions for the VC on the X51 R3:

32 gigs isnt a problem i have that on my X51 R3 now without issues ..
now a 1080 gtx has been done and info is on forums, but requires modifications to fit aswell as cable adapters.... ive run a 1070gtx no issues with slight mod(removing front case fan) and a cable adapter..
a 1080ti just uses to much power for the 330W power brick the Ti requires roughly 250 watts + for average gaming and some upwards of 300W apparently .. now a proper 330 watt power brick probably only outputs 80% ish continuous power
